Special Pairing of Italian Wines with Italian Cuisines
by Annette Dixon

Dining with Bacchus at Osteria Via Stato, 620 North State Street, one of Chicago’s Iconic Restaurants,
was a pleasurable two hour experience. Pairing white wine with Crostini and not just sea food, felt so
good on the palet. Lesson learned in this pairing is according to your taste buds, you may only drink
white wine, so give white a try with Tomatoes, you may like it. There were twelve wines introduced
from 12 Provinces in Italy which I will not be introducing. The Vino Spumante from Veneto, with the
Antipasti was appealing. For the red wine lovers, Riviera Ligure De Ponente Pigato Doc (Luguria 2018).
I actually tried the Red wine with local Whitefish, with white wine sauce, it was our secondi! The wine
was from Cinciano, Toscana, 2018, to my surprise a past favorite of many years ago, Chianti Classico
Docg and the dessert wine I enjoyed was the Moscato D’asti Docg served with Torta Al Cioccolato E
Caramello, the wine was from Piemonte
.
